Vegan Oats, Banana Pancake recipe|quick and healthy

Pancakes are always easy to cook. They are healthy and consume less effort and time.  You may include different flours, fruits and conduct your own experiments. Oats and banana pancake without adding baking soda is my go-to recipe for breakfast. They are gluten free too! Along with oats and Banana, I also mix coconut milk or cream which will enhance the flavor. So, here is a three-ingredient vegan, gluten-free pancake recipe. Hope, you relish!

Ingredients Measurement
Rolled Oats 1/2 Cup
Sliced ripen Banana 2/3 Cup
Coconut milk/cream 1/2 Cup
Coconut oil 2 Tablespoons
Water 1/2 Cup
Salt (to taste) 1/2 Teaspoon

Directions:

  1. Combine the rolled Oats, Banana, salt, coconut milk/cream in a blender and blend it until smooth. Add the water to adjust the consistency. Allow the batter to stand for 15 minutes
  2.  Add the coconut oil on a hot cast iron pan, scoop the batter by 1/4 cupfuls onto hot skillet and cook until golden brown on either side (Flip and cook through)
  3. Transfer it to a plate and serve hot with Indian cane sugar Jaggery or any nut butter or fruits of your choice

Note: I don’t add the Baking powder in my recipe.
