GeelRys or Yellow rice is a classic South African cuisine. Along with its vibrant yellow color, aroma of this cuisine makes the dish unique among other yellow rice varieties. It gets the yellow color from turmeric powder and saffron strings that are mixed while cooking the rice. The wonderful aroma is due to cinnamon sticks, fragrance rice (you may use the plain rice), lemon zest. Pure turmeric powder also contributes to the aroma. The taste is mildly sweet(due to the black raisin and brown sugar added). This particular dish is treated as a side in South Africa and served with meat roast. But for a vegetarian meal, it will be served with Yogurt, cucumber, onion dip (refer recipe for Raita) or plain yogurt.
This is a quick and easy and one pot recipe.

Ingredients | Measurement |
Fragrance Rice | 2/3 Cup |
Lemon zest | 1 Tablespoon |
Brown Sugar | 2 Table Spoons |
Grounded Organic Turmeric | 1 Tablespoon |
Black Raisin | 2 Tablespoon |
Cinnamon powder and Cinnamon stick | 1 Teaspoon, & 1 Stick |
Salt and saffron strings | 1/2 Teaspoon |
Directions:
1.Soak the rice (I have used Thailand fragrance rice) for say 1/2 hour and wash them
2. Place the rice, lemon gest, sugar, cinnamon powder, salt, turmeric, raisin, saffron strings and cinnamon stick in pressure cooker pot and pressure cook (you may cook in any other pot with the appropriate amount of water)
3. When the rice is cooked, transfer it to a serving bowl and garnish with some more raisins, cilantro, and serve when hot with Raita (Recipe here) (Yogurt, cucumber, Onion dip)

I finally tried it! It’s good. Thank you. I haven’t taste before now but I finally remember eating something similar from my country. We didn’t use cinnamon and sugar. There was other spice in it but the rice cooking, raisins and the zaffron is the same.
